The Best Chaffles

If you’ve been on a keto lifestyle for more than a couple of days you’ve probably heard the word “chaffle.”

You may ask yourself “what the heck is a chaffle?” and more importantly “how do I make a chaffle?” Well, this post is for you! Sarah and I have made several variations of chaffles over the last two years, but the two chaffle recipes we have on our YouTube channel are some of the best we’ve ever tried!

So what is a chaffle? A chaffle is the creation of an unknown person in the keto community, we are unsure of the origin of this magical bread replacement, but we are happy it exists! A chaffle is a waffle, that’s made with cheese. (If you know the original creator of the chaffle, let us know in the comments and we would love to give them credit!)

Some variations of the chaffle call for many different ingredients. Others only have cheese. Our chaffles fall somewhere in the middle. We believe that our chaffles are the closest thing to crispy bread.

How do you make a chaffle? Well, you can use a standard waffle maker, but those are huge! That’s why we prefer the Dash Mini Waffle Maker. They make single, small chaffles that are the perfect size for burgers and sandwiches. You can buy a Dash Mini Waffle Maker here.

Once you have a waffle maker, or your new mini waffle maker…you now have to decide on which recipe you want to use. There are HUNDREDS of variations on the internet and in Facebook groups, but we really love ours! Sarah and I have 2 main chaffle recipes that we always go back to. The first is the original chaffle recipe that we originally published in Feburary of 2020. You can watch our original chaffle video below.

Original chaffle recipe:

  • 1 cup low moisture mozzarella cheese

  • 2 tablespoons almond flour

  • 1 egg

  • 1 teaspoon baking powder

Optional flavor additions can include:

  • garlic powder

  • old bay

  • thyme, rosemary

  • parmesan

  • cheddar

Method: Preheat your waffle maker and wait until the light turns off. Use a heaping 1/8 measuring cup to scoop your batter into the middle of your Dash and close the lid. Leave the lid close and cook the chaffle for 4-5 minutes. Do not open the waffle maker during the cooking process! After the light turns off again take the chaffle and put it on a wire rack to cool.

Store chaffles in containers, separated by parchment rounds. Store in the refrigerator and they should last about a week! You can also lay them flat on a baking sheet, put them in the freezer for an hour until mostly frozen, then put them in a plastic bag to store and eat in a months time. Reheat in the oven at 350 degrees or heat them up in a toaster to crisp them up again!

For our new chaffle recipe we took out the baking powder completely and added xanthan gum. We also took our the yolk from the egg and only used a single egg white. This means that the chaffle mixture is less wet, but ultimately its less eggy and crispier! The storage and cooking method are the same as our original chaffle recipe mentioned above!

Makes 3 chaffles. Can be doubled or tripled to make more. NOTE: Our old recipe had baking powder in it, this new recipe has NO baking powder or soda.

  • 1 cup low moisture mozzarella cheese

  • 2 tablespoons almond flour

  • 1 egg (egg white only) = 2 tablespoons egg whites

  • 1/2 teaspoon of xanthan gum

Chaffles

Can be refrigerated for around a 5 and reheated in the chaffle maker or in a toaster.

Ingredients

  • 1 cup shredded mozzerella
  • 2 tablespoons almond flour
  • 2 tablespoons egg white
  • 1/2 teaspoon xanthan gum

Instructions

  1. Heat up your mini waffle maker
  2. Mix xanthan gum and almond flour into the shredded cheese
  3. Mix 2 tablespoons of egg whites
  4. Spread 1/8 cup or 2 tablespoons of the mixture onto the waffle maker. 
  5. Close and cook for 4-5 minutes until the chaffle is golden brown.
  6. Let cool on a cooling rack.
