Chicken Floretine Chaffle Sandwich

This chaffle sandwich is inspired by a sandwich that my mom use to make for us growing up. My Mom would use the Pillsbury pizza dough as the bread. Inside would be mayo, spinach, provolone, chicken and a red onion jam.

It was one of my favorite meals growing up and I would eat by the sheet pan full! After I started eating keto I was looking for a good replacement for the pizza crust bread. When we perfected our chaffle recipe I knew that it would make a great bread option for this sandwich! Hence that is how our chicken Floretine Chaffle sandwich was born.

The star of the dish is the sweet and tangy red onion jam. The caramelized red onion really elevates the sandwich to another level. I am going to try to add this jam to other sandwiches in the future.

Chicken Florentine Chaffle Sandwich

Chicken Florentine Chaffle Sandwich

Ingredients

  • (9-oz.) pkg. frozen chopped spinach
  • 1/4 cup mayonnaise
  • 1 tablespoon garlic powder
  • 1 tablespoon Montreal chicken seasoning (or any Italian spice blend)
  • 2 tablespoons olive oil (to saute red onion)
  • 1 large red onion
  • 2 tablespoon sugar replacement, I used allulose
  • 3 tablespoons red wine vinegar
  • 2 boneless skinless chicken breast halves
  • slices provolone cheese
  • chaffles as the bread!

Instructions

  1. Bake chicken in the oven at 350 degrees for 25 mins or until the internal temp is 165.
  2. Let chicken rest. Slice thinly.
  3. Defrost spinach, drain water.
  4. Chop red onion, add to skillet on medium heat with olive oil.
  5. Let reduce until onions are translucent and soft.
  6. Add in red wine vinegar and sweetener, cook a bit more
  7. Melt provolone cheese on on side of the chaffle.
  8. Spread mayo on the bottom chaffle.
  9. Put sliced chicken, spinach and red onion, add more garlic mayo on the top and put top chaffle to complete the sandwich. Enjoy!
