White Chocolate Rasberry Mousse Pie

Inspired by a non-keto recipe that I happened across last week I decided to make a keto-friendly version of this mousse dessert! This has raspberries, white chocolate and lots of heavy cream! We used a basic almond flour crust, we got the recipe from Wholesome Yum which you can see here! (we used allulose as our sweetener of choice in this recipe!)

What Do I Need To Make The Mousse

You will need: (for the filling)

1 3/4 cup Lily’s White Chocolate Chips

1 1/2 cup defrosted frozen raspberries (or fresh)

1 tablespoon lemon juice

1 packet unflavored gelatin powder

3 cups heavy whipping cream divided

3/4 cup powdered allulose

White Chocolate Raspberry Mousse

If you choose to make this without a crust it's easier and less carbs/calories and just as good in my opinion!

Ingredients

  • 1 + 3/4 cup
  • Lily's White Chocolate Chips
  • 1 1/2 cup defrosted frozen raspberries (or fresh)
  • 1 tablespoon lemon juice
  • 1 packet unflavored gelatin powder
  • 3 cups heavy whip divided
  • 3/4 cup powdered allulose

Instructions

  1.  Blend the raspberries in a blender (or food processor) until smooth.
  2. Add in your lemon juice
  3. Sprinkle the unflavored gelatin powder on the top of the raspberry puree and let it bloom for 10 minutes
  4. Heat 1 cup of heavy cream to a simmer
  5. Pour it over your white chocolate chips and stir them to combine
  6. Stir in your raspberry puree
  7. Put it in the refrigerator while you whip your heavy cream
  8. In a large bowl whip 2 cups of heavy cream and your powdered allulose until stiff peaks form
  9. Fold in the raspberry mousse base into the heavy cream gently until well combined, but don't overdo it! 
  10. Either put the mixture into your pre-made pie crust or portion out into individual servings. 
  11. Let set in the fridge for at least 4 hours or overnight (cover it!)
